Raspberry Jam
Surely one of everyone's favourite jams, especially when it's hand-made with nothing but fruit and sugar. I like to make individual pastry cases and fill them with raspberry jam and whipped cream or mascarpone cheese.
Here is the perfect pastry for this. Rub 5oz butter into 8oz plain flour. Dissolve 2 tablespoons of caster sugar in 1 tablespoon of water. Mix into the dry ingredients and work together. Line tins, prick with a fork and bake until golden.
