Beetroot Chutney

Beetroots grow well in Orkney, even I managed to grow some last year, although I need to be much more ruthless with the garden pests for them to be much of a success. All the beetroot in this chutney was grown in Orkney, by better gardeners than me. A spoonful adds a lovely splash of colour to a cold meat salad, as well as a delicious tangy flavour.
