Thick Oatcakes

Oats were for a long time the staple crop in Orkney, as in the rest of Scotland. Samuel Johnston described it dismissively as, 'A grain, which in England is generally given to horses, but in Scotland supports the people'. Boswell is said to have replied, 'Which is why England is known for its horses and Scotland for its men.' Scientists now agree that oats are good for you so keep a few packets in the house for a healthy and sustaining snack.
These rough-grain oatcakes are made with palm oil from a sustainable source. I find that two of them, topped with cheese, make a good lunch in the office.
