110g (4oz) butter
1.35kg (3 lb) sugar
225g (8 oz) tin condensed milk
300ml (1 cup) water
Vanilla essence

Melt the butter in a saucepan, add sugar, water and plain milk and bring slowly to boil for 5 minutes. Remove from the heat and leave for 5 minutes.

Add the condensed milk and, stirring occasionally, cook slowly until a little dropped into cold water forms a caramel consistency.

Add 5ml (1 teaspoon) of vanilla essence.

Remove from heat, beat thoroughly with a wooden spoon, then pour into a greased tin.

Mark into squares when nearly cold.
